Each recipe has an introductory paragraph, a mouthwatering close-up photo, the number of servings, a good ingredients list, and excellent instructions. Unfortunately, there is not any nutritional information or calorie counts, but everything else is great.
Do not miss the Chicken, Spinach, and Artichoke Enchiladas. They are delicious! And for small bites, the Mini Jalapeño Crab Cakes with Lemon Aioli recipe is perfect. If you need a sweet-stopper for a crowd, nothing will be better than the Cowboy Cookie Skillet. That will satisfy the whole family. This is a fun journey through Tex-Mex cooking, and a beautiful one as well.
